The Caldwell House Lemon Chiffon Pancakes

These pancakes are light, fluffy and delicious!

(Serves 3-4)

3 Eggs, separated
2 T. Vegetable Oil
½ tsp. Salt
2 tsp. Baking Powder
1 cup Cottage Cheese
1 T. Maple Syrup
1 ½ T. Lemon Zest
2 T. Lemon Juice
½ cup Flour
Optional:  Blueberry Syrup


Beat egg whites until stiff in an electric mixer bowl – set aside.

Combine yolks and rest of ingredients and mix well until smooth & fluffy.

Fold in egg whites.

Cook on griddle.

Serve with blueberry syrup and butter.
