The Caldwell House’s Fluffy Cream Cheese Scrambled Eggs

3 oz. cream cheese

1 T. butter

1 cup half & half

8 eggs

½ tsp. Salt

½ tsp. Pepper

¼ tsp. Paprika

Melt cream cheese and butter slowly in double boiler, stirring constantly.  If heated too quickly, it will curdle.  When melted and smooth, stir in half & half.

Add eggs, salt, pepper and paprika and whisk until blended.  (Paprika is needed to add some color to the egg mixture which becomes white after the addition of the cream cheese.)

Cook slowly in buttered skillet.  Garnish with finely chopped parsley.

More than any other breakfast foods, scrambled eggs seems to be the most requested item.  The Caldwell House uses this recipe to put a twist on the usual scrambled egg recipe.
