The Caldwell House Potato and Spinach Frittata

1 large potato sliced very thin

½ large onion chopped small

¼ bell pepper chopped small

6 eggs

1 cup cheese

½ cup spinach

1 tsp. Slap Your Mama or Tony Chachere seasoning

½ tsp. salt

½ tsp. garlic powder

Spray bottom of saucepan with cooking spray.  Put sliced potato  in bottom of  saucepan and brown on both sides.  Add onions and bell peppers and cook till clear or softened a little.

In separate bowl mix eggs, cheese and spinach and seasonings and pour into saucepan.  Let eggs set up a few minutes then put into 350 degree oven and bake for 25 minutes.
