The Caldwell House Gluten Free Egg White Spinach Frittata – Cajun Style

Are you on a gluten-free diet?  Do you feel like your ability to enjoy great meals is finished?  Try this breakfast recipe and discover a new way of eating.  It has to be delicious — The Caldwell House Bed and Breakfast serves it to our gluten-free guests – with a Cajun twist!

2 cups fresh spinach leaves

1 tablespoon olive oil

2 teaspoons minced garlic

8 large egg whites

1/3 cup Sargento  All Natural cheese (any one you like)

¼ teaspoon salt

¼ teaspoon Cajun seasoning

2 tablespoons grated Sargento Parmesan Cheese

Saute spinach leaves in a nonstick pan over medium heat with a few drops of water for 1 to 2 minutes.  Drain well.

Place oven rack in highest position and set oven to broil.  Place olive oil and drained spinach in an oven-safe skillet over medium heat.

Add minced garlic to spinach and cook for 2 minutes.  Pour in egg whites, cheese, salt, Cajun seasonings and let cook until bottom begins to firm.  Once the bottom is browned and the eggs are firm, place skillet into the oven for 1-2 minutes.

Once the top is cooked, sprinkle the parmesan cheese on top and return back into the oven for 30 seconds.
