Each month, The Caldwell House is proud to host cooking demonstrations and classes offered by chefs from Acadiana and beyond.  Each chef demonstrates various dishes, from appetizer to dessert, and each guest enjoys a taste of whatever the chef is preparing. Learn to cook like a pro.

Chef Toni Norman Haynes, a native of Abbeville, now resides in Tampa, Florida.  On June 16th, she will return home to demonstrate and share her knowledge of cooking.

On this Thursday evening, June 16, 2011, she will demonstrate Red Snapper Picatta with lemon, capers and wine.  Chef Toni will also demonstrate how to cook Shrimp Risotto, and guests will be treated to great food and fun.

Chef Toni will demonstrate and teach students how to make her father’s famous recipe, Chicken Curry, Abbeville style, with 15 different garnishes.

Chef Toni’s Father served in India during World War II and was introduced to curry at the palace Maharani of CoochBeHar.  When he returned home, he “Cajunized” the recipe and there are people living in Abbeville who remember this remarkable dish.  Chef Toni demonstrates this receipt all over the United States and Belgium and will now introduce it to us.

(Brunch Demonstration)

Chef Toni Norman Haynes will teach a hands-on cooking class in The Caldwell House kitchen.

Students will learn to make Savory Crepes “Merveille de la Mer” with shrimp, scallops, mushrooms in a bechamel sauce and Sweet Crepes with mixed berry filling with Cointreau or Kirsch and whipped cream.   Students will not only be shown how to make the crepes – they will take turns making them!  This class is limited to 8 students, so don’t delay reserving your space for this class.

$70/person – soft drinks and water included.

NOTE:    Chef Toni will donate a portion of each class fee to the Elemore Morgan, Jr. Visual Arts Endowment.  Elemore was Chef Toni’s first cousin.  The Elemore Morgan, Jr. Visual Arts Endowment was created to provide support to artists and further the artistic vision exemplified by the life of Elemore Morgan, Jr.  The mission of this organization is to demonstrate that the visual arts are significant cultural necessities by supporting, promoting, enhancing and strengthening the visual arts, primarily in south Louisiana.

DOOR PRIZE:   A drawing will be held at each cooking demonstration and class for one lucky person to win a limited edition print of “The Gazebo in Magdalen Square” by Artist, Mae Mayeux.

Chef Brian Blanchard of iMonelli Restaurant in Lafayette returns to The Caldwell House to demonstrate seafood and other dishes.

Chef Brian’s first cooking demonstration, “That’s Amore” on February 10th,  was so successful, we asked him to come back for another demonstration.  His demonstration on Italian dishes was informative and the food was delicious.  Chef Brian paired wine with the meal, which he will do at his second demonstration, as well.  Since the second demo on March 31st will take place during Lent, he will feature seafood.  What will he prepare?  It’s a surprise!
Chef Brian is a native of Morgan City, Louisiana, but he now resides in Lafayette with his family.  He is Executive Chef and owner of iMonelli Restaurant, a la Carte Restaurant and Catering Facility, and Cafe JoJo in Morgan City, Louisiana.

Chef Heath Lemoine of Zea’s Restaurant in Lafayette will demonstrate at The Caldwell House  one of Zea’s signature dishes, Asian Almond Shrimp, as well as other items from Zea’s, along with some of his personal recipes.

Zea’s Rotisserie and Grill was established in Harahan, Louisiana (near New Orleans) in 1997 by three energetic and creative chefs known as “The Taste Buds”.

Chef Heath has had a passion for food since he was a child, cooking with his Grandmother and his parents. Heath worked many years for the Department of Public Safety and Corrections, inevitably resigning and pursuing his passion to “tickle the palate”. Relocating to New Orleans he attended Delgado Community College majoring in Culinary Arts. During his schooling he trained under Executive Chef Lisa Hanson at LePavillion Hotel. Eventually he went to work for the fast-paced Bubba Gump Shrimp Company. Immediately he was promoted to a company trainer and began to travel, opening new stores across the United States. Hoping to move closer to his Cajun roots he landed a job with Taste Buds Management and soon after moved to Zea Rotisserie and Grill in Lafayette. Blessed with great people, food and good ole Southern hospitality he has enjoyed a successful career at Zea, consistently producing awesome food and pursuing his mouthwatering dream.

Chef Carlos Russo of The Accidental Chef Cooking School in Lafayette will demonstrate Chicken Cacciatore and other menu items

Chef Carlos’ lifelong love of cooking stretches back to his upbringing in a large Sicilian family.  After settling in Acadiana in the 1990s, he learned the art of Cajun Cuisine  and the magic that could be spun from simple ingredients like flower, oil, cayenne and paprika.  In 2010, he began performing cooking demonstrations throughout Acadiana, including regular appearances at Rouses in Youngsville.  He is owner of The Accidental Chef Cooking School which exists to bring pleasure, joy and excitement to the cooking experience.  His concept is unique but simple: small classes, the best chefs in Acadiana and one-on-one interaction with each of the students.  His cooking styles range from Italian to Creole to Cajun.

The Caldwell House in Abbeville, La. is proud to welcome cookbook author, cooking instructor and chef, Toni Norman Haynes to demonstrate her cooking skills at The Caldwell House. Chef Toni is a fourth generation Abbeville native.

Chef Toni Haynes has over 35 years experience in the culinary arts field.  She has been the owner and operator of her own catering company, serving high-end functions in 4 different states.  Since 1976, she has devoted some of her time to passing her culinary knowledge on through teaching and has taught cooking classes in Florida, Connecticut, Denver, Long Island and Wisconsin.  Regularly, for the past 7 years she has been an instructor at the renouned Food and Wine magazine’s annual Culinary Festival.  She is also the author of two cookbooks that feature her favorite recipes from her catering years.  You can look forward to having this seasoned chef as your Culinary Guide!
